Healthy Christmas Menu Ideas: How to Roast Chestnuts

11589825_sWith only 3 days until Christmas, the rush is on to get ready for parties and family feasts.  To balance off all the decadent cookies, chocolate and cake, here are some healthy menu ideas to include in your menu.

Healthy Appetizers

  • Hummus and veggie tray (carrots, celery, red peppers, cucumber and zucchini)
  • Whole nuts in the shell: display a nice bowl of walnuts, pecans, almonds and hazelnuts
  • Organic Corn Chips with Salsa

Main Course – stick to whole foods

  • Roasted Turkey or Chicken
  • Try roasting your veggies: beets, parsnips, brussel sprouts or carrots
  • Sweet potatoes, turnips and rutabaga are all very healthy root vegetables with lots of vitamins
  • Don’t forget the salad! Always include a nice mixed green salad on the table, add some pumpkin seeds and dried cranberries to make it festive.
  • Homemade cranberry sauce with walnuts and oranges (see previous blog for recipe)

Healthier Desserts

  • Rainbow fruit tray: make a colourful fruit tray full of delicious fruit such as: pineapple, green grapes, mandarin oranges, strawberries and melon
  • Try modifying your favorite cookie recipes with honey or maple syrup instead of sugar
  • Homemade egg custard – a simple but delicious dessert
  • Try Roasted chestnuts – an old-fashioned treat that is packed with nutrients

How to Roast Chestnuts:

This traditional favorite is easy to make and a nutrient-packed treat.  Chestnuts are a good source of fiber, vitamin C, B vitamins and folic acid.  They are also rich in minerals such as iron, calcium and magnesium.  Here is how I make them.

  1. Preheat oven to 425 degrees F.
  2. Take each chestnut, place on a clean tea towel and cut an “X” with a sharp knife. (This allows the steam to escape while baking)
  3.  Place chestnuts on a baking pan with the cut side facing upwards.
  4. Roast for 20-30 minutes, checking regularly until they split open and are golden brown.
  5. Let them cool a bit, until they are still warm and you can peel and eat the inside part.
