African Yam and Peanut Soup Recipe

This delicious soup is sure to be a hit in your home.  Not only is it super easy to make, but it is highly nutritious.  This is a variation of a traditional dish that originates from Africa, where yams were a major component of the indigenous diet.  Yams are high in B vitamins, fiber and Beta Carotene.  They are a much healthier alternative to the regular white potato.  If you cannot eat peanuts, just substitute the peanut butter with almond butter like I did.

Yam vs. Sweet Potato

This recipe can also be made with Sweet Potatoes.  In North America the terms yam and sweet potato are used interchangeably, for a tuberous root vegetable that has pale to dark orange flesh.  But the actual yam plant originates in Africa and is from a completely different family.  A true yam has a thick, dark brown skin, white flesh inside, and can grow up to 8 feet long and weigh up to 150 pounds!

African Yam and Peanut Soup Recipe

What you need:

3 large yams (or sweet potatoes), peeled and chopped
1 red onion, chopped
1 tsp ginger, peeled, chopped fine
1 cup of vegetable broth
¼ teaspoon of sea salt
¼ tsp cayenne
1/3 cup of 100% natural peanut butter (or almond butter)
2 tbsp chopped cilantro

What you do:

1.  Chop the yams, onions and ginger and place in a medium pot.

2.  Add 1 ½ cups of water, broth, sea salt and cayenne.  Heat over Medium-high heat to bring to a boil. Then reduce heat to medium-low and simmer for 10-15 minutes, until yams are soft.

3.  Remove pot from stove and allow it to cool slightly.  Use a hand blender or food processor to puree the mixture.  Make sure mixture is not too hot.

4.  Add peanut butter to soup mixture and reheat.  Sprinkle cilantro on top.
