Healthy Breakfast Recipe: Yogurt and Fruit Parfait

Usually this is the time of year when your commitment to your New Year’s Resolutions start to wane.  Often when people start a healthier lifestyle they put together rigid meal plans that can often get dull after the initial motivation wears off.  But nutritious eating does not have to be boring.  In fact one of the biggest secrets to making lifelong lifestyle changes in your diet is to make meals interesting and delicious like this healthy breakfast recipe for Yogurt and Fruit Parfait!

This is one of my favorite snacks and it is also great for a light breakfast.  It is a fun way to eat fruit and yogurt and you can get creative with your combinations.  Get your kids involved too; by participating in preparing healthy meals, they are laying the foundation for their future habits and health. This is one of the most important things you can teach children, the rewards of good nutrition.

Yogurt and Fruit Parfait

What you need:

1 ½ cups vanilla yogurt (preferably organic) (you can also substitute soya yogurt)
1 banana, peeled and sliced
1 Royal Gala apple, chopped
1 cup blueberries
½ cup of trail mix or granola
Drizzle of honey or maple syrup

What you do:

1)      Take two large glasses.
2)      Put 1/3 of yogurt in each glass.
3)      Then put a layer of fruit and trail mix.
4)      Then put another layer of yogurt.
5)      Continue layering until the glasses are full.
6)      Drizzle the top with a bit of honey or maple syrup

No time for breakfast? Combine the yogurt and fruit in a sealable plastic dish and then eat it at the office (keep the granola on the side until you are ready to eat it so it doesn’t get soggy).

  1. Thanks for your positivity! With kids it is all about making healthy food fun (and it works for the big kids too!) I also love making fruit & veggie smoothies in my Vitamix, in fact I just had one with bananas, blueberries, cucumber and almond milk. (1/2 cup blueberries, 2 bananas, 1 mini cucumber and almond milk).
