Even though the weather is cold, there are lots of reasons to love February. Ontarians are excited to get an extra long weekend for Family Day, to relax or have a fun day with the kids. The most obvious reason to love February is because of Valentine’s Day, the day devoted to love and sweethearts.
Today is the day where people rush to the stores to buy last minute gifts of chocolates, roses and heart-shaped cards for that special person in their life. Or perhaps you are choosing to cook a heart healthy Valentine’s Day dinner at home tonight for that special someone. Valentine’s Day has traditionally been associated with love and the heart for many centuries.
Perhaps because of this connection, February has been designated the official month for heart health both Canada and the USA. According to the Heart and Stroke Foundation, every seven minutes in Canada, someone dies of heart disease or stroke. In the USA more than 700,000 people die every year.
Heart disease is actually a group of diseases associated with the health of this organ. The heart is the organ that gets its energy from the constant supply of nutrients that is circulated through the blood. The good news is that these diseases are largely preventable, and a huge factor is leading a healthy lifestyle which includes a healthy diet.
As mentioned in previous blog posts, one of the most important nutrients for protecting and maintaining a healthy heart are Omega-3 Fatty Acids. These oils are called essential fatty acids since the body cannot produce them on their own. These oils are especially rich in foods like Salmon, Walnuts and Flax Seeds. Make sure to add these and other Omega-3 rich foods into your regular diet to ensure that you get an adequate intake of these essential fatty acids.
Here is a recipe that is rich in Omega 3’s and delicious. It is a great Valentine’s or Family Day meal to make for the people you love.
Salmon Teriyaki Rice Pockets Recipe
1 pound Atlantic salmon fillet, cut into 2 inch squares
4 tbsp Green onions, chopped
Round rice paper sheets
Sunflower or canola oil
(Makes about 3 servings or 8 pockets)
- Rinse and dry the salmon with paper towels.
- Cut the salmon into 2-inch squares.
- Fill a large bowl with warm water. Place one rice paper sheet to soak for 2-3 minutes until it is soft, but not falling apart.
- Place rice paper sheet on a clean flat surface and then put one piece of salmon in the middle. Drizzle with teriyaki sauce and top with ½ tsp of green onion.
- Fold rice paper over the salmon like a package. Fold one side over, then the side across from it, then the remaining two sides.
- Repeat with remaining salmon pieces. But make sure that they don’t touch as they will stick together.
- In a large wok or non-stick skillet, heat 2 tbsp oil to medium-high heat.
- Place rice pocket in pan with the folded side facing down.
- Heat for 5-7 minutes per side, turning very carefully. Cover with a lid if needed; be careful as oil may spatter.
- Cook until rice paper starts to be brown and crisp. And salmon is cooked thoroughly.
- Serve with Teriyaki sauce with green onions for dipping.
