Healthy Ideas for Easter Dinner: Maple Baked Sweet Potatoes

bigstock-Sweet-Potato-Casserole-37244206With the Easter long weekend coming up soon, it is a good idea to start planning your menu for your family get-together.  Whether you are hosting the event, or just bringing a dish to a pot-luck, why not give some thought to making the meal healthy.  Here are some ideas for a healthier Easter Dinner including these maple baked sweet potatoes!

  • Ask your guests to bring main course or appetizers, as there are always too many desserts
  • Offer a healthy dessert option such as a fresh fruit trifle or a Homemade Apple Pie
  • Serve a fruit tray (buy pre-made to cut down on preparation time)

If you are looking for a vegetable dish that is both nutritious and delicious, look to the sweet potato.   Sweet potatoes (sometimes called yams) are high in minerals such as potassium.  When compared to a common white potato, they are higher in fiber, vitamin A and beta carotene.  Here is an easy and scrumptious recipe that your family and guests will love!

Maple-Baked Sweet Potatoes


8 cups sweet potatoes or yams (peeled and diced into 1-inch cubes)
1/3 cup of pure maple syrup
2 tbsp of butter
3/4 teaspoon cinnamon
1 tsp sea salt


  1. Preheat oven to 400 degrees Fahrenheit.
  2. Spread sweet potatoes on 2 baking trays, single layer.
  3. Melt butter and combine with maple syrup, cinnamon and salt in a small bowl.
  4. Pour mixture over sweet potatoes and mix until evenly coated.
  5. Cover trays with foil.
  6. Bake for 40-45 minutes, turning every 15 minutes.

Tip:  To save time, make these sweet potatoes the day before your event, refrigerate and then reheat them in the oven for 15 minutes at 350 degrees Fahrenheit.

    I like sweet potatoes but my kids have never really taken to them. They will eat sweetened carrots, but not sweet potatoes.

    Turns out, they don’t like MY sweet potatoes :(
