Vince’s New Market & Co. Location Opens at Upper Canada Mall

By the time you’re reading this, the store will have officially opened! Vince’s Market in Upper Canada Mall is part of the new 40,000 sq. ft. Market & Co. food experience that brings together a variety of best-in-class artisan merchants, covering everything from soups to sausages, and produce to pastries.

Partner, CFO and controller Giancarlo Trimarchi describes the 1,100 square foot Vince’s location as a “micro version of one of our stores.”

“From a produce perspective, we’ll really be able to zero in on seasonal,” he continues. “What’s in season around the world, not just locally. And we’ll be showcasing things we haven’t had the opportunity to do in our main stores.”

He adds that staffing is also key, with a focus on customer service and merchandising. “Attractive, high quality displays, and the way we interact and get to know our customers will be critical to our success.”

The new store will include fresh produce, prepared foods, salad bar, cheeses, fresh olive bar, and a selection of staple grocery items.

“And for people on the go in the mall, a little bit of snacking like bulk foods, as well as healthy options like vegan, gluten-free snack bars, and other popular new products.”

Although it is one of 18 Market & Co. merchants, spanning a tremendous variety of fresh foods, Giancarlo sees Vince’s as ‘the core.’ “We are a critical component to the market in terms of filling a customer’s shopping basket with goods they can bring home to prepare a really special meal.”

“I think the new store highlights the best of who we are.”
