French Onion Soup

Ingredients

  • 1 tbsp oil
  • 3 tbsp Butter
  • 5 onions (thinly sliced)
  • ½ cup of white wine
  • 6 cups stock(beef, chicken, veggie)
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 onion pricked with 3 cloves
  • Salt and pepper to taste
  • Gruyere or parmesan cheese, grated, optional
  • 8 slices of baguette (or any type of day-old hard bread), cut into cubes, optional

Method

  1. In a large pot, heat oil and melt butter over medium heat. Add onions and cook until deeply golden brown, stir occasionally.
  2. Add the white wine and cook for a few minutes.
  3. Prick an onion with 3 cloves, set aside.
  4. Add the stock, thyme, bay leaf and onion with pricked cloves to the pot.
  5. Bring to a boil and then let simmer for 5-10 minutes.
  6. In the meantime, toast your cubed bread, if using.
  7. Turn off the stove and add salt and pepper to taste.
  8. Remove the pricked onion.
  9. Pour into a soup bowl and add the bread and cheese if using.
  10. Enjoy 🙂
