French Onion Soup

Ingredients
- 1 tbsp oil
- 3 tbsp Butter
- 5 onions (thinly sliced)
- ½ cup of white wine
- 6 cups stock(beef, chicken, veggie)
- 1 tsp dried thyme
- 1 bay leaf
- 1 onion pricked with 3 cloves
- Salt and pepper to taste
- Gruyere or parmesan cheese, grated, optional
- 8 slices of baguette (or any type of day-old hard bread), cut into cubes, optional
Method
- In a large pot, heat oil and melt butter over medium heat. Add onions and cook until deeply golden brown, stir occasionally.
- Add the white wine and cook for a few minutes.
- Prick an onion with 3 cloves, set aside.
- Add the stock, thyme, bay leaf and onion with pricked cloves to the pot.
- Bring to a boil and then let simmer for 5-10 minutes.
- In the meantime, toast your cubed bread, if using.
- Turn off the stove and add salt and pepper to taste.
- Remove the pricked onion.
- Pour into a soup bowl and add the bread and cheese if using.
