Ingredients

  • 2 cups of watermelon, cut into chunks
  • 2 cups of tomatoes, cut into chunks
  • 2 handful of mixed greens
  • 1 cucumber sliced
  • ¼ cup parsley chopped
  • ¼ cup peppermint leaves, chopped
  • ¼ red onion, sliced
  • 2-3 tablespoons of olive oil
  • 1 tablespoon balsamic vinegar

Method

  1. Toss the salad with olive oil, vinegar, sea salt, and pepper.
