Oatmeal Raisin Chocolate Chip Cookies

Ingredients
- 1/2 cup raisins
- 1/2 tsp baking soda
- 3/4 cup flour
- 1/2 tsp baking soda
- 1 tsp cornstarch
- 1 tsp cinnamon
- Pinch of nutmeg
- Pinch of cloves
- 1/2 tsp salt
- 1 & 3/4 cups whole oats (not quick), divided
- 1/2 cup butter unsalted (soft enough to leave a fingerprint)
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla
- 1 cup chocolate chunks
Method
- Heat a small pan over medium heat.
- Add raisins and just enough water, so the raisins are submerged.
- Add baking soda to the pan, stir and heat until simmering.
- Remove from heat and drain raisins.
- Add 1/4 cup oats to a blender and blend until it becomes oat flour.
- In a bowl, add the regular flour, the blended oat flour, baking soda, cornstarch, cinnamon, nutmeg, cloves, salt and remaining whole oats. Mix well.
- With a mixer or by hand, add the butter and sugars and mix until well combined.
- Add an egg and vanilla into the butter sugar mixture. Mix until just combined.
- Add the dry ingredients to the butter mixture, mixing slowly until the mixture has almost come together.
- Fold in the raisins and chocolate chunks.
- Using an ice cream scoop, scoop out the dough balls, scoop the dough onto a baking sheet and cover with plastic wrap.
- Refrigerate for 1 hour or up to overnight. Preheat the oven to 350 degrees.
- Bake at 350 degrees for 8 minutes.
