Oatmeal Raisin Chocolate Chip Cookies

Ingredients

  • 1/2 cup raisins
  • 1/2 tsp baking soda
  • 3/4 cup flour
  • 1/2 tsp baking soda
  • 1 tsp cornstarch
  • 1 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of cloves
  • 1/2 tsp salt
  • 1 & 3/4 cups whole oats (not quick), divided
  • 1/2 cup butter unsalted (soft enough to leave a fingerprint)
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup chocolate chunks

Method

  1. Heat a small pan over medium heat.
  2. Add raisins and just enough water, so the raisins are submerged.
  3. Add baking soda to the pan, stir and heat until simmering.
  4. Remove from heat and drain raisins.
  5. Add 1/4 cup oats to a blender and blend until it becomes oat flour.
  6. In a bowl, add the regular flour, the blended oat flour, baking soda, cornstarch, cinnamon, nutmeg, cloves, salt and remaining whole oats. Mix well.
  7. With a mixer or by hand, add the butter and sugars and mix until well combined.
  8. Add an egg and vanilla into the butter sugar mixture. Mix until just combined.
  9. Add the dry ingredients to the butter mixture, mixing slowly until the mixture has almost come together.
  10. Fold in the raisins and chocolate chunks.
  11. Using an ice cream scoop, scoop out the dough balls, scoop the dough onto a baking sheet and cover with plastic wrap.
  12. Refrigerate for 1 hour or up to overnight. Preheat the oven to 350 degrees.
  13. Bake at 350 degrees for 8 minutes.
