Yellow Lentils (Daal)

Ingredients
- 1 cup dal (yellow moong), rinsed
- 1 small onion, chopped
- 1 tsp ginger, minced
- 2 cloves garlic, minced
- 2 medium tomatoes, chopped
- 1 tsp cumin powder
- 1 tsp coriander powder
- ½ tsp turmeric powder
- ½ tsp red chili powder (adjust to your spice level)
- 1 tsp salt
- 3 cups of water
- 2 tbsp cilantro chopped for garnish, optional
- 1 tsp of fresh lime juice, optional
Method
- Add all the ingredients in a pot (except for the garnishes) and bring to a boil.
- Reduce heat to low-medium and let simmer for about an hour, or until dal is cooked and soft.
- Remove from heat and garnish with the optional cilantro and lime juice.
