Ingredients

For the Sauce

  • 1/2 tsp garlic powder
  • 1 tsp ground ginger
  • 1/3 cup apple cider
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 1 tbsp vinegar
  • 2 tbsp liquid or coconut amino or soy sauce

For the chicken

  • 1 tsp Salt
  • 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp pepper
  • 1 tbsp olive oil, x2
  • 2 lbs chicken thighs boneless

Method

For the Sauce

  1. Heat a pan over medium heat, add all sauce ingredients and mix.
  2. Bring to a boil and simmer for 20 minutes on low heat.

For the chicken

  1. Turn the oven to 350 degrees.
  2. Combine all the chicken seasoning and mix well.
  3. Apply all the seasoning on the chicken, both front and back.
  4. Add 1 tbsp of oil to a grill or skillet over high heat.
  5. Using the other 1 tbsp of oil on, drizzle on each side of the chicken.
  6. Add chicken to the heated pan/grill and cook for 1-2 minutes. Reduce heat to medium and cook for another 6-10 minutes, flipping chicken through half-way.
  7. Add chicken to the baking dish and add the sauce.
  8. Bake at 350 degrees for 30-35 minutes.
