Banana Muffins

Ingredients
- 1.5 cups flour (can use gluten-free flour or rice flour)
- 3/4 cups brown sugar (or coconut sugar)
- 1 tsp baking soda
- pinch of salt
- 1 tsp vanilla
- 3 eggs (or 3 tbsp chia combined with 9 tbsp water if making vegan)
- 1 stick (or ½ cup) of butter softened (or vegan butter)
- 3 very ripe bananas, mashed
- ½ cup chocolate chips or cocoa nibs (optional)
- ½ cup of roughly chopped walnuts (optional)
Method
- Heat oven to 350 Degrees.
- Place12 muffin liners in muffin pan.
- Mix the wet ingredients in a bowl (eggs, vanilla extract, butter, bananas).
- Mix dry ingredients in a bowl (flour, sugar, baking soda and salt).
- Mix dry and wet ingredients together, just until fully incorporated.
- Add chocolate chips/walnuts and mix.
- Add remaining chocolate chips and walnuts on top.
- Bake at 350 Degree for 20-25 minutes until golden brown or until a toothpick comes out clean.
Notes for intake form: Use regular flour, brown sugar, eggs (not chia), chocolate chips and walnuts
