Italian Sandwiches

Ingredients
- 1 large loaf bread (e.g. Italian, ciabatta)
- 1/4 cup pesto
- ¼ cup olive oil
- 1 large tomato, sliced
- 2 red bell peppers roasted and seeded, sliced open
- ¼ cup balsamic vinegar or glaze
- 3 oz prosciutto
- 4 oz Italian meats mix
- 6 slices of mozzarella
- 1/2 cup baby spinach
Method
- Slice the bread in half and spread pesto on one side.
- Spread a small amount of olive oil on the other half.
- Add tomatoes and roasted red pepper and drizzle balsamic glaze on top.
- Add the meat layers, cheese and spinach.
- Close the sandwich and wrap in plastic wrap.
- Place the sandwich under something heavy for 6 hours to overnight.
