Italian Sandwiches

Ingredients

  • 1 large loaf bread (e.g. Italian, ciabatta)
  • 1/4 cup pesto
  • ¼ cup olive oil
  • 1 large tomato, sliced
  • 2 red bell peppers roasted and seeded, sliced open
  • ¼ cup balsamic vinegar or glaze
  • 3 oz prosciutto
  • 4 oz Italian meats mix
  • 6 slices of mozzarella
  • 1/2 cup baby spinach

Method

  1. Slice the bread in half and spread pesto on one side.
  2. Spread a small amount of olive oil on the other half.
  3. Add tomatoes and roasted red pepper and drizzle balsamic glaze on top.
  4. Add the meat layers, cheese and spinach.
  5. Close the sandwich and wrap in plastic wrap.
  6. Place the sandwich under something heavy for 6 hours to overnight.
