One Pot Vegetable Pasta

Ingredients
- 1 lb. pasta of choice (not cooked)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 yellow onion, chopped
- 1 zucchini, chopped
- ½ cup. Mushrooms, chopped
- 2 carrots, sliced
- 1 cup spinach
- 24 oz (about 3 cups) pasta sauce
- 1 tbsp Italian seasoning
- ¼ cup of chopped parsley, optional
- top with mozzarella, shredded, optional
Method
- Cook pasta according to directions on the package and set aside.
- Heat 1 tbsp oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds, then add onions, and all the veggies, except for the spinach.
- After 5 mins add spinach and mix.
- Add pasta, pasta sauce and Italian seasoning to the skillet, mix and bring the sauce to a boil.
- Remove from heat, top with the optional parsley and mozzarella cheese
