Did you know that horseradish is not actually a radish?  It is a perennial plant that is in the Brassica family along with broccoli, mustard and cabbage, but it got its name because it could be substituted for radish in recipes. Horseradish varieties are used widely across many cultures from Eastern Europe, to the Wasabi in Japanese food.

Traditionally the root has been used to fight colds and clear the sinuses.  If you have ever experienced eating strong horseradish, you are familiar with the sensation it gives you in your nose.  Horseradish contains potassium, calcium, magnesium and phosphorous and is also high in vitamin C.

Holiday Horseradish Mashed Potatoes

Ingredients

4 medium potatoes (Yukon Gold or Russet)
1 tsp sea salt
¾ cup organic milk or unsweetened soya or almond milk
¼ cup organic butter
3-4 teaspoons horseradish sauce (mild)
Dried cranberries
Fresh green onion or scallions
Fresh ground pepper to taste

Instructions

  1. Peel potatoes and cut into one-inch cubes.  Place in medium pot and fill with water and add 1 tsp salt.  Bring to a boil and then reduce to medium-low for about 10 minutes until you can pierce potatoes easily with a fork.
  2. Drain potatoes into a colander and then return them back into the pot.
  3. Mash the potatoes and add remaining ingredients while over low heat so that butter melts.
  4. Season with sea salt and fresh pepper.
  5. Garnish with fresh slices of scallions and dried cranberries for a festive look.
