Avocado Blueberry Salad

Ingredients
- 1 cup quinoa, cooked
- 1 cup blueberries
- 1/2 avocado, sliced
- 1/4 cup cilantro
- 1 small onion, chopped
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp lime juice
- 1/2 tsp maple syrup
- 1/4 cup feta, crumbled [optional top in the very end]
Method
- In a large bowl add quinoa, blueberries, avocado, cilantro, onion and mix them.
- In a separate bowl, add olive oil, salt, pepper, lime juice, maple syrup and stir them together.
- Pour the dressing mixture into the quinoa bowl and stir to combine all.
- Top with crumbled feta.
