Avocado Blueberry Salad

Ingredients

  • 1 cup quinoa, cooked
  • 1 cup blueberries
  • 1/2 avocado, sliced
  • 1/4 cup cilantro
  • 1 small onion, chopped
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp lime juice
  • 1/2 tsp maple syrup
  • 1/4 cup feta, crumbled [optional top in the very end]

Method

  1. In a large bowl add quinoa, blueberries, avocado, cilantro, onion and mix them.
  2. In a separate bowl, add olive oil, salt, pepper, lime juice, maple syrup and stir them together.
  3. Pour the dressing mixture into the quinoa bowl and stir to combine all.
  4. Top with crumbled feta.
