Banana Muffins

Ingredients

  • 1.5 cups flour (can use gluten-free flour or rice flour)
  • 3/4 cups brown sugar (or coconut sugar)
  • 1 tsp baking soda
  • pinch of salt
  • 1 tsp vanilla
  • 3 eggs (or 3 tbsp chia combined with 9 tbsp water if making vegan)
  • 1 stick (or ½ cup) of butter softened (or vegan butter)
  • 3 very ripe bananas, mashed
  • ½ cup chocolate chips or cocoa nibs (optional)
  • ½ cup of roughly chopped walnuts (optional)

Method

  1. Heat oven to 350 Degrees.
  2. Place12 muffin liners in muffin pan.
  3. Mix the wet ingredients in a bowl (eggs, vanilla extract, butter, bananas).
  4. Mix dry ingredients in a bowl (flour, sugar, baking soda and salt).
  5. Mix dry and wet ingredients together, just until fully incorporated.
  6. Add chocolate chips/walnuts and mix.
  7. Add remaining chocolate chips and walnuts on top.
  8. Bake at 350 Degree for 20-25 minutes until golden brown or until a toothpick comes out clean.

Notes for intake form: Use regular flour, brown sugar, eggs (not chia), chocolate chips and walnuts
