BBQ Cabbage Slaw

Ingredients

Dressing:

  • 1 tbsp tahini
  • juice and zest of 1 lemon
  • 2 tbsp tamari soy sauce
  • 1 clove garlic, crushed
  • 2-3 tbsp water to thin if needed

Salad:

  • 4 oz red cabbage
  • 4 oz green cabbage
  • 1 red pepper finely diced
  • 1 small onion finely diced
  • fresh parsley
  • fresh mint

Method

Dressing:

  1. Place all ingredients in a blender until smooth.

Salad:

  1. Chop cabbage and place in a bowl with remaining ingredients, pour over the dressing and toss.
  2. Keep in the refrigerator 2-3 days.
  3. Add beans, feta cheese or protein for added nutrients
