BBQ Cabbage Slaw

Ingredients
Dressing:
- 1 tbsp tahini
- juice and zest of 1 lemon
- 2 tbsp tamari soy sauce
- 1 clove garlic, crushed
- 2-3 tbsp water to thin if needed
Salad:
- 4 oz red cabbage
- 4 oz green cabbage
- 1 red pepper finely diced
- 1 small onion finely diced
- fresh parsley
- fresh mint
Method
Dressing:
- Place all ingredients in a blender until smooth.
Salad:
- Chop cabbage and place in a bowl with remaining ingredients, pour over the dressing and toss.
- Keep in the refrigerator 2-3 days.
- Add beans, feta cheese or protein for added nutrients
