Black Bean Soup

Ingredients

  • 3 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin powder
  • 1/4 tsp chili pepper (add more for more heat!)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cans black beans, not drained (398ml)
  • 1 small chili pepper whole (cut in half for even more heat)
  • 1 cup water
  • 1 tsp vinegar
  • juice from half a lime

Method

  1. Heat oil in a pot over medium heat
  2. Add onions and sauté until translucent
  3. Add garlic and saute until fragrant
  4. Add all of the spices and combine
  5. Add the black beans and water
  6. Add chili pepper, if using
  7. Increase heat and bring to a boil
  8. Lower and simmer for about 20 minutes
  9. Remove chili pepper, and blend with a hand blender or standing blender
  10. Add some more water if too thick (only add 1/4 water at a time as the soup will thicken once it cools)
  11. Add vinegar and lime
  12. Adjust salt to taste
  13. Garnish with a slice of lime/cilantro
