Black Beans Wrap

Ingredients

  • 1 can of black beans (13-15 ounces)
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tbsp lime juice
  • 1/4 cup chopped cilantro
  • salt & pepper to taste
  • 1 cup of shredded cheese, optional
  • 2 pitas

Method

  1. Combine the beans, garlic, cumin lime juice, cilantro and salt & pepper in a bowl.
  2. Cut the pitas in half (so that each pita is a half circle) and add the bean mixture evenly into each pita pocket
  3. If using cheese, add the shredded cheese on the top of the bean mixture in the pita
  4. Warm up the pita pockets in the microwave for 30 seconds, or until the cheese is melted.
