Cajun Chicken

Ingredients
For the Sauce
- 1/2 tsp garlic powder
- 1 tsp ground ginger
- 1/3 cup apple cider
- 1/2 cup water
- 1/4 cup brown sugar
- 1 tbsp vinegar
- 2 tbsp liquid or coconut amino or soy sauce
For the chicken
- 1 tsp Salt
- 1/2 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp pepper
- 1 tbsp olive oil, x2
- 2 lbs chicken thighs boneless
Method
For the Sauce
- Heat a pan over medium heat, add all sauce ingredients and mix.
- Bring to a boil and simmer for 20 minutes on low heat.
For the chicken
- Turn the oven to 350 degrees.
- Combine all the chicken seasoning and mix well.
- Apply all the seasoning on the chicken, both front and back.
- Add 1 tbsp of oil to a grill or skillet over high heat.
- Using the other 1 tbsp of oil on, drizzle on each side of the chicken.
- Add chicken to the heated pan/grill and cook for 1-2 minutes. Reduce heat to medium and cook for another 6-10 minutes, flipping chicken through half-way.
- Add chicken to the baking dish and add the sauce.
- Bake at 350 degrees for 30-35 minutes.
