Caramelized Onion & Apple Stuffing

Ingredients

  • 8 cups multigrain bread (1/2 inch cubes)
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 2 large yellow onions(thinly sliced)
  • ½ tsp ground black pepper
  • ¼ tsp ground pepper
  • 1 ¼ tsp salt
  • 2 tbsp chopped fresh herbs (rosemary/parsley/thyme)
  • 1.5 cups diced celery
  • 2 apples, chopped
  • 1 ½ cups chicken broth
  • 2 tbsp cider vinegar

Method

  1. Preheat oven to 375 degrees Fahrenheit. Oil the baking pan, place the baking sheet and toss bread with pepper. Bake, stirring once, until crispy, about 15 minutes.
  2. Heat oil in a large skillet over medium heat. Add sliced onions, 2 tsp thyme and 1/4 tsp each salt and pepper.
  3. Cook, stirring occasionally, until golden, 20 to 25 minutes. Keep stirring occasionally and reducing heat if necessary, until the onions are deep golden brown.
  4. Add vinegar, increase heat to high and cook, scraping up the browned bits, until the vinegar evaporates, about 1 minute. Transfer to a large bowl.
  5. Heat butter in the skillet over medium-high heat.
  6. Add celery and the caramelized onion. Add apples, herbs and salt. Reduce heat to medium and cook, stirring occasionally, until the apples start to soften, about 5 minutes.
  7. Transfer to the bowl with the bread. Add broth and gently stir until well combined.
  8. Transfer to the prepared baking dish. Cover with foil.
  9. Bake for 20 minutes. Uncover and continue baking until the top is crispy, about 15 minutes more.
