Caramelized Onion & Apple Stuffing

Ingredients
- 8 cups multigrain bread (1/2 inch cubes)
- 3 tbsp olive oil
- 2 tbsp butter
- 2 large yellow onions(thinly sliced)
- ½ tsp ground black pepper
- ¼ tsp ground pepper
- 1 ¼ tsp salt
- 2 tbsp chopped fresh herbs (rosemary/parsley/thyme)
- 1.5 cups diced celery
- 2 apples, chopped
- 1 ½ cups chicken broth
- 2 tbsp cider vinegar
Method
- Preheat oven to 375 degrees Fahrenheit. Oil the baking pan, place the baking sheet and toss bread with pepper. Bake, stirring once, until crispy, about 15 minutes.
- Heat oil in a large skillet over medium heat. Add sliced onions, 2 tsp thyme and 1/4 tsp each salt and pepper.
- Cook, stirring occasionally, until golden, 20 to 25 minutes. Keep stirring occasionally and reducing heat if necessary, until the onions are deep golden brown.
- Add vinegar, increase heat to high and cook, scraping up the browned bits, until the vinegar evaporates, about 1 minute. Transfer to a large bowl.
- Heat butter in the skillet over medium-high heat.
- Add celery and the caramelized onion. Add apples, herbs and salt. Reduce heat to medium and cook, stirring occasionally, until the apples start to soften, about 5 minutes.
- Transfer to the bowl with the bread. Add broth and gently stir until well combined.
- Transfer to the prepared baking dish. Cover with foil.
- Bake for 20 minutes. Uncover and continue baking until the top is crispy, about 15 minutes more.
