Ensalada Gazpacho

Ingredients
- 1 lime, juiced
- 2 tomatoes, diced
- 1 sweet white onion, diced
- ½ c/ cilantro leaves*, chopped
- 1-2 Kirby cucumbers, chopped
- 1 Tbsp/ Olive oil
- ¼ tsp/ sea salt
- 1 tsp raw honey (optional)
- 1 pinch red pepper flakes
- 1 c/ quinoa, cooked and chilled
- ¼ c/ raisins, currants, or dried cranberries (optional)
- 1 tsp/ cumin
- 1 avocado, sliced
Method
- Mix all ingredients together and serve with a slice or two of avocado and a squeeze of lime.
*Don’t like or can’t tolerate cilantro? Replace the cilantro with basil or parsley or mint or all three.
