Jar Salad for Hormone Balance

Ingredients
- 1 mason jar
- 2 tbsp dressing
- 1 pint cherry tomatoes
- 1/2 cup chickpeas
- 1 roasted bell pepper (cored/seeded)
- 2-3 pitted olives
- 2 ounces arugula
- 2 ounces spinach
- chopped raw broccoli
- chopped raw cauliflower
- 1 cup shredded organic chicken (optional if vegan)
- 3-4 walnuts (chopped)
Method
- Pour dressing on the bottom of the jar. Stack ingredients as follows: tomatoes, chickpeas, red pepper, olives, arugula, spinach, broccoli, cauliflower, chicken and walnuts.
- Jar salad can last in fridge for 3 days, but try to eat within 1-2 days
- When ready to eat, dump onto plate and dressing will cover your salad
