Jar Salad for Hormone Balance

Ingredients

  • 1 mason jar
  • 2 tbsp dressing
  • 1 pint cherry tomatoes
  • 1/2 cup chickpeas
  • 1 roasted bell pepper (cored/seeded)
  • 2-3 pitted olives
  • 2 ounces arugula
  • 2 ounces spinach
  • chopped raw broccoli
  • chopped raw cauliflower
  • 1 cup shredded organic chicken (optional if vegan)
  • 3-4 walnuts (chopped)

Method

  1. Pour dressing on the bottom of the jar. Stack ingredients as follows: tomatoes, chickpeas, red pepper, olives, arugula, spinach, broccoli, cauliflower, chicken and walnuts.
  2. Jar salad can last in fridge for 3 days, but try to eat within 1-2 days
  3. When ready to eat, dump onto plate and dressing will cover your salad
