One Pot Vegetable Pasta

Ingredients

  • 1 lb. pasta of choice (not cooked)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 yellow onion, chopped
  • 1 zucchini, chopped
  • ½ cup. Mushrooms, chopped
  • 2 carrots, sliced
  • 1 cup spinach
  • 24 oz (about 3 cups) pasta sauce
  • 1 tbsp Italian seasoning
  • ¼ cup of chopped parsley, optional
  • top with mozzarella, shredded, optional

Method

  1. Cook pasta according to directions on the package and set aside.
  2. Heat 1 tbsp oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds, then add onions, and all the veggies, except for the spinach.
  3. After 5 mins add spinach and mix.
  4. Add pasta, pasta sauce and Italian seasoning to the skillet, mix and bring the sauce to a boil.
  5. Remove from heat, top with the optional parsley and mozzarella cheese
