Quinoa Chickpea Salad

Ingredients
- 1/2 cup uncooked quinoa
- 1 1/2 cups cooked chickpeas or 1 15 oz can chickpeas rinsed and drained
- 1 small shallot chopped small
- 1/2 fennel bulb chopped small
- 2 Persian cucumbers chopped small
- 1/2 cup parsley chopped
- 1/4 cup Marcona almonds
- 1 teaspoon olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Method
- Rinse uncooked quinoa well and place in a small saucepan with 1 cup water. Bring to a boil, then lower heat to a light simmer. Use a lid to partially cover and cook for 15 minutes.
- In a large bowl, add rinsed chickpeas and chopped vegetable’s and almonds
- Add lemon juice and olive oil and combine gently.
- Add salt and pepper. Taste and adjust seasonings.
