Quinoa Chickpea Salad

Ingredients

  • 1/2 cup uncooked quinoa
  • 1 1/2 cups cooked chickpeas or 1 15 oz can chickpeas rinsed and drained
  • 1 small shallot chopped small
  • 1/2 fennel bulb chopped small
  • 2 Persian cucumbers chopped small
  • 1/2 cup parsley chopped
  • 1/4 cup Marcona almonds
  • 1 teaspoon olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Method

  1. Rinse uncooked quinoa well and place in a small saucepan with 1 cup water. Bring to a boil, then lower heat to a light simmer. Use a lid to partially cover and cook for 15 minutes.
  2. In a large bowl, add rinsed chickpeas and chopped vegetable’s and almonds
  3. Add lemon juice and olive oil and combine gently.
  4. Add salt and pepper. Taste and adjust seasonings.
