Ingredients
- 2 cups of watermelon, cut into chunks
- 2 cups of tomatoes, cut into chunks
- 2 handful of mixed greens
- 1 cucumber sliced
- ¼ cup parsley chopped
- ¼ cup peppermint leaves, chopped
- ¼ red onion, sliced
- 2-3 tablespoons of olive oil
- 1 tablespoon balsamic vinegar
Method
- Toss the salad with olive oil, vinegar, sea salt, and pepper.
