Ontario corn has arrived! Corn on the cob is an excellent addition to the grill, you can get creative with seasonings if you choose but it really is perfect as is or coated in butter and sprinkled with salt.
Try Adding Leftover Ontario Corn to Your Favourite Salad
My favourite way to enjoy Ontario corn is the next day removed from the cob and added to a salad. Each kernel distributes well into the salad and allows for the perfect amount of sweetness in every bite.
This vibrant summer salad goes with just about any entrée and can be made entirely from seasonal produce. Juicy tomatoes, sweet corn kernels and snappy green beans are sure to please. The beauty of summer salads lies in the versatility of ingredients. You can add just about any in season vegetable, choose your favourite dressing and top with cheese, toasted nuts, dried/fresh fruit or fresh herbs to create a unique dish to suit the tastes of your family and guests. Use this month to get creative with what the season has to offer!
Summer Corn and Green Bean Salad
- 3 cups fresh green beans, cooked and cooled
- 3 ears Ontario corn, boiled or grilled, kernels removed from cob
- 1 pint cherry or grape tomatoes, halved
- 1/2 red onion, diced
- 1/2 cup crumbled Feta cheese
Dressing:
- 4 Tbsp olive oil
- 3 Tbsp red wine vinegar
- 1 tsp lemon zest
- 1 Tbsp fresh-squeezed lemon juice
- 2-3 garlic cloves, finely chopped
- 3/4 tsp salt
- 1/4 tsp freshly-ground black pepper
- 2 Tbsp chopped fresh mint
Serves 4-6
What To Do:
Whisk together dressing ingredients with the exception of the mint in a small bowl and allow flavours to merry while you prep salad ingredients. In a bowl, combine cooked beans, corn kernels, tomatoes, red onion and chopped mint. Pour dressing over beans and toss gently topping with feta cheese.
