The month of December is a time for celebration with friends and family. I love holiday gatherings but the part that stresses me out is holiday gift buying.
Trying to find the “perfect gift” can be daunting, but I like to give my clients and friends who I see over the holidays a little something to say I’m grateful. With that train of thought I decided to simplify the art of gift giving by doing something I loved and sharing it with the ones I love: baking!
I’m going to share my delicious Flourless Almond Coconut Cookie recipe with you… Keep reading!
Give the Gift of Homemade Baked Goods
I enjoy baking, so much so that I started a natural snack line called Danielle’s Naturals a few years back. Most people love baked goods and if they are a reflection of you and your specialties it’s even better. Everyone knows someone who makes the best shortbread, or butter tarts, or brownies… Wouldn’t you love a batch of those for some holiday cheer?
Of course my background in holistic nutrition reflects what I enjoy baking. So this year I am going to be whipping up a few batches of my favourite flourless almond cookies, packaging them beautifully in some Dollar Store finds and gifting them.
A Gift the Whole Family Can Help Make
You can gather a group of friends or the kids to bake together for an added bonus. These almond cookies are delicious and also hold well which make them perfect for gifting or just enjoying with friends and family at your next gathering.
Flourless Almond Coconut Cookies
- 2 cups almonds, ground
- ½ cup maple syrup
- 1/3 cup shredded coconut
- 1 large egg
- 1/2 tsp orange extract (1 tbsp orange zest will work as well)
- 1 tsp vanilla extract
- Pinch of sea salt
- Makes 12 cookies
Directions
Preheat oven to 350F. Blend all ingredients together in a food processor and bake on parchment covered baking sheet. Bake for 25min. You can also sparkle these puppies with dried cranberries before baking for a festive kick.
