chunky tuna saladI can’t believe next week is back to school already. September is usually a time for change. Whether it be a new school, job, or routine, it involves some readjusting after our summer schedule. I love September for that very reason; it always seems like a fresh start. To me September 1st is my New Year, a time to set new goals and timelines. Most of my goals are business centered, but after all the summer festivities I like to become more mindful of my diet.

Simple & Versatile Meal Planning with Tuna

When my schedule gets busy I count on meal planning to eat healthy with limited time. I’ve mentioned before that one of my pantry staples is canned tuna, it’s easy and versatile. I will add tuna to leafy greens, tomato sauce for a protein packed pasta, and will prepare a tuna salad for a yummy sandwich. This tuna salad recipe is great served between two slices of bread or piled high on a bed of greens.

Chunky Tuna Salad

  • 12 ounces canned tuna (2 large cans, in water)
  • ½ cup mayonnaise
  • ¼ cup Dijon mustard
  • 1 Tbsp hot sauce
  • 1 tsp Worcestershire sauce
  • ¼ cup celery, small dice
  • ¼ cup shredded carrot
  • ¼ cup red onion
  • ¼ cup flat leaf parsley, finely chopped
  • 1/8 cup red pepper, small dice
  • 1 tsp celery salt
  • ¼ tsp paprika
  • ¼ tsp cayenne
  • Salt and Pepper to taste

Makes 4-6 servings

What To Do:

  1. Drain tuna and toss into a bowl, make sure to leave large chunks.
  2. Add remaining ingredients and mixed until everything has come together.
  3. Refrigerate for at least an hour before serving. Will keep in an airtight container for 3-5 days.

Different Views with the Same Goals

It can be quite challenging to be an advocate in the health and wellness field. There are bloggers, writers, TV personalities, and health professionals doing their best to educate and inform others in various areas of expertise.

While everyone might be preaching a different message or opinion, it is important to respect one another’s point of view. Information pertaining to our health has to be the most confusing as it’s always evolving. Even doctors who we count on as trusted health professionals change their recommendations regarding diet based on new research. Remember when it was margarine over butter, how saturated fats were to be avoided, and now coconut oil is one the healthiest foods around? It’s always changing.

I do my best to provide neutral information based on what I’ve learned and experiences I’ve had. Not everyone chooses to eat organic, not everyone eats gluten-free, not everyone cares about GMO’s, and not everyone wants to learn, or desires to eat healthier.
